 Healthy Homemade Muesli

Ingredients:

  • 300g oats
  • 100g whole hazelnuts
  • 100g flaked almonds
  • 100g sultanas
  • 75g desiccated coconut
  • 150g dried cranberries
  • 50g unrefined caster sugar (optional)

Method:

  1. Simply lightly mix ingredients and serve with ice cold milk
  2. Drizzle over some local clear honey or seasonal berries to add some natural sweetness

 

Classic Eggs Benedict – Philipburn Hotel, BW Signature Collection

Classic Eggs Benedict

Ingredients:

  • 1 English breakfast muffin
  • 2 slices of hand carved roast ham
  • 2 soft poached eggs
  • Lashings of rich hollandaise sauce

Method:

  1. Lightly toast the English breakfast muffin
  2. Separate the English breakfast muffin into 2 halves and top with a slice of roast ham
  3. Add the soft poached eggs
  4. To finish, drizzle the warm hollandaise sauce over the eggs
  5. Alternatively, replace the roast ham with smoked salmon
  6. Enjoy!

Brioche French Toast with Berries & Greek Yoghurt

Ingredients:

  • 2 slices of thick cut brioche
  • 2 whole eggs
  • 50ml semi skimmed milk
  • 2 tablespoons raspberries
  • 2 tablespoons strawberries
  • 1 tablespoon blueberries
  • 50ml Greek yoghurt
  • 20ml golden honey

Method:

  1. Whisk together the eggs and milk until well combined
  2. Dip the brioche in the egg mixture on both sides until well coated
  3. Roughly dice all the fruits, combine in a bowl and drizzle with half of the honey
  4. Pan fry the brioche on both sides until golden brown and crisp, top with berry mixture then drizzle with yoghurt and the remaining honey
