Welsh cuisine thrives on the freshest of ingredients: pick over the fish stalls in Swansea and Cardiff markets for Gower cockles, sewin (sea trout) and spider crabs, and look inland for Welsh saltmarsh lamb and Carmarthen Ham. The orchards of Monmouthshire and potato fields of Pembrokeshire and Gower add vitamins to this mix. Kick-start the day with traditional seaweed laver bread, bacon and cockles for breakfast and for lunch sample meaty cawl mangu soup, made with lamb, bacon and leek.
